Rye Grain Variation: Boiling Hydration

Into a pot, pour around 1⁄2 lb. (227 g) of rye per quart jar you intend to make, and add a little extra for good measure. Fill the pot with water to at least twice the depth of the rye in the container. The rye will expand as it cooks.

Bring the water to a low boil or a high simmer and cook it for 1 hour. If you cook the rye at too high a temperature, the rye kernels will burst, releasing starches, and the rye will become sticky and more difficult to work with. Grains with burst kernels also seem to have higher rates of contamination than those without.
